Photoshop. That' s the program that keeps me locked into Windows. Everything else is available in Ubuntu -- for free!

Quickbooks for all it will do. This is in spite of having to deal with Intuit.

Since I make my living with computers (and other's lack of understanding of them) my answer may sound odd to many, but I find Microsoft Outlook to be the most useful program I own.
