Well....which version of Outlook are we talking about here?
It could be a couple different things, but I would first check under the View menu when looking at your message to see if the "To" option got unchecked.
Post back with your version of Outlook and I'll see if I can narrow it down further for you.

Click on View | Message Header and see if that doesn't do the trick for you. If not, post back here and let me know.
