I think it's two things:
One, dropping the Beta tag means larger businesses and other enterprise type places will be more willing to use Google for their domain. (Some companies get nervous around Beta software).
Two, with the new Chrome OS they're putting together, they are trying to move away from the Beta Joke they've become, so when they release an OS Beta, people don't assume it's the finished product.
Just my two guesses.
